Seared Scallops & Chorizo

Pan-seared U-10 Scallops with spicy chorizo crumbles and a cilantro lime crema, topped with crispy julienned leeks.

Ingredients

Scallops


6 Each                                 U-10 Scallops
To Taste                             Salt
To Taste                             Black Pepper
1 Tbsp.                                Vegetable Oil
½ Cup                                  Chorizo Crumbles, Cooked

Garnish                               Leeks, Julienned & Fried

 

Cilantro Lime Crema


¼ Cup                                  Sour Cream
2 Tbsp.                                Lime Juice
1 Tbsp.                                Cilantro, Chopped
To Taste                             Salt
To Taste                             Black Pepper

Directions

  1. In a small mixing bowl, mix together the sour cream, lime juice, cilantro, salt and black pepper for the cilantro lime crema.
  2. Season the U-10 Scallops with salt and black pepper.
  3. In a small saucepan on medium-high heat, sear the U-10 Scallops in the vegetable oil for about 1-2 minutes on each side.
  4. Plate the U-10 Scallops with the cilantro lime crema and chorizo crumbles, garnish with crispy leeks
